Cocktail of the Month: Duke’s Famous Bloody Bloody Mary

by Norris Comer

Duke's Bloody Bloody MaryWe’ve got a treat for you this issue for our cocktail of the month. Duke’s Famous Bloody Bloody Mary, Duke’s Chowder House’s #1 selling drink, is virtually a meal unto itself, and now you can make it yourself while underway. Be warned, after one of these babies you won’t tolerate a slapped-together vodka and overly salted pre-mixed concoction ever again. Use the iconic slanted highball glass for the true experience, although a normal highball will do just fine.

Salacious Sautéed Prawns

  • 6 wild Mexican prawns
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon fresh garlic, diced small
  • Pinch of Duke’s Ready Anytime Seasoning
  • 1 teaspoon fresh organic herbs (mix rosemary, thyme, and oregano, stems removed)

Directions: Heat olive oil in small sauté pan and add prawns and garlic. When prawns are halfway done (about two minutes), add fresh herbs and continue cooking for one more minute, or until prawns have lost all translucency. Remove pan from heat and chill prawns in refrigerator.

Bloody Mary Mix – Directions: Mix one ounce of Demitri’s Bloody Mary Seasoning with two cups of tomato juice.

Duke’s Ready Anytime Seasoning:

This is your go-to spice for French fries or anything broiled. It’s perfect for mixing up in a big batch and storing for use “anytime.” It’s savory and salty, with a little heat and herbs to mellow out the burn. The following recipe makes approximately 3 cups.

  • 1 cup Kosher salt
  • ⅓ cup + 2 ½ tbsp lemon pepper
  • ¼ cup pepper
  • ¼ cup Creole seasoning
  • ¼ cup granulated garlic
  • 5 tsp dried oregano
  • 5 tsp dried basil
  • 5 tsp dried marjoram
  • 5 tsp dried thyme
  • 5 tsp dried rosemary
  • ¼ cup sugar

Duke’s Famous Bloody Bloody Mary

  • 1 lime wedge
  • 1 1/2 ounces of Duke’s Bloody Mary Infused Vodka
  • 5 ounces of Bloody Mary Mix (Demitri’s available here or use a generic)
  • 2 Salacious Sautéed Prawns (see recipe)
  • 1 olive
  • 1 Tillen Farms asparagus spear
  • Kosher salt

Directions: Squeeze lime wedge into a 12- to 14-ounce glass with a salted rim. To salt the glass, pour kosher salt on a small plate and rub lime wedge around the rim of the glass. Slowly rotate the rim of the glass in the salt to adhere. Fill salted glass with ice and add Duke’s Bloody Mary Infused Vodka. Top off with bloody Mary mix. Garnish with a skewer of two sautéed prawns and an olive. Drop in the asparagus spear.
